Mediterranean Hummus Bowl

Ingredients

  • ½ bag of microwave quinoa (125g)
  • 60g baby spinach
  • ½ red onion sliced
  • 80g Cherry tomatoes quartered
  • ½ cucumber sliced
  • ½ tin of chickpeas (120g)
  • 15g olives pitted
  • Chopped parsley for serving
  • 2 tablespoons of extra virgin olive oil for serving

Method

  • Mash the chickpeas until a paste forms (use olive oil to combine)
  • Spoon the hummus onto a plate or bowl
  • Assemble the remaining ingredients on top of the hummus as desired
