Mediterranean Hummus Bowl

Ingredients
- ½ bag of microwave quinoa (125g)
- 60g baby spinach
- ½ red onion sliced
- 80g Cherry tomatoes quartered
- ½ cucumber sliced
- ½ tin of chickpeas (120g)
- 15g olives pitted
- Chopped parsley for serving
- 2 tablespoons of extra virgin olive oil for serving
Method
- Mash the chickpeas until a paste forms (use olive oil to combine)
- Spoon the hummus onto a plate or bowl
- Assemble the remaining ingredients on top of the hummus as desired
